Cucumbers
4 Persian cucumbers
3/4 tsp salt
1 shallot
2 green onions
2 tsp white sesame seeds

Chili Garlic Vinaigrette
1.5 tbsp rice vinegar
8 cloves garlic
2 tsp soy sauce
1 tbsp sesame oil
2 tbsp chili oil

Cucumbers
4 Persian cucumbers
3/4 tsp salt

1.5 tbsp rice vinegar
8 cloves garlic
2 tsp soy sauce
1 tbsp sesame oil
2 tbsp chili oil

Preparation -

  1. Thinly slice the shallot and 2 green onions.

  2. Mince 8 cloves garlic.

  3. Hit cucumbers with something hard to make the sides burst open.

  4. Cut in half lengthwise and then into 1 inch pieces.

  5. Place in a bowl, toss with salt.

  6. Set aside for 30 minutes to draw out water.

  7. Drain and discard salty water while leaving the cucumbers in the same bowl.

Chili Garlic Vinaigrette -

  1. Combine 1.5 tablespoon rice vinegar, minced garlic, 2 teaspoon soy sauce, 2 teaspoon sesame oil, 2 tablespoon chili oil, green onions, 2 teaspoons sesame seeds, and shallot with cucumbers.

  2. Serve and sprinkle with more sesame seeds and chili crisp.

  3. Dressing becomes more watered down as cucumber water leaks out.
